Lao Gan Ma Noodle Recipe

Lao Gan Ma or Old Grandmother is a popular brand of sauces in China and can be found in many Guizhou cuisines. There are many different flavors such as Spicy Chili Crisp, Chili Oil with Black Bean, Fried Chili in Oil, Hot Chile Sauce, and Spicy Bean Paste, etc.

Garlic Chili Oil Noodles

These condiments are used in noodle dishes, fried rice, soups, dumplings, etc. Additionally, I like using these on my vegetables and over eggs. They are jam-packed with flavors and will enhance any dish you are preparing.

Using the Lao Gan Ma Hot Chili Sauce, I am making chili oil to combine with rice noodles for a quick and flavor-packed meal. This can be substituted with any Lao Gan Ma condiment of your choice. I like the Hot Chili Sauce because it has additional ingredients such as chunky kohlrabi and peanuts that add texture and uniqueness to the dish. I also topped the noodles with the Spicy Chili Crisp for extra crunch and flavor.

Ingredients:

2 tbsp Soy sauce

1 tsp Vinegar

2 tbsp Green onion

1 tbsp Ginger

2 tbsp Garlic

3 tbsp Hot Chili Sauce

1 tbsp Sesame Oil

2 tsp Sesame seeds

5 tbsp Oil (any neutral flavor oil)

200 g Rice noodle

1 cup Bok choy

Optional toppings:

Green onion

Cilantro

Lao Gon Ma Spicy Chili Crisp

Steps:

  1. Combine soy sauce, vinegar, green onion, ginger, garlic, hot chili sauce, sesame oil, sesame seeds to a boil
  2. On medium heat, heat oil in a pot
  3. Pour the hot oil into the bowl with all the ingredients and set it aside
  4. In a pot, boil water and cook noodles per package instructions
  5. Once noodles are cooked, drain completely and pour the hot chili sauce over the noodles
  6. Mix well
  7. Serve with optional toppings and enjoy!
